Firstly to use 8G you need Vista64. Good luck getting that to run all your peripherals.
4G (Only 3.2G or so will be actually used) is more then enough for gaming as video cards carry more and more RAM to take the load off the system RAM.
Heavy apps such as encoding and rendering of image and video files is where maxing out RAM us useful.
You would be better off concentrating on getting the best quality matched RAM pair with low latency and good FSB speed as you can afford and of course a good Mobo, CPU and Video card.
